Thirty years ago, barely any resources discussed food safety for the consumer. After a landmark E.coli outbreak in 1993, an entire culture of food safety has emerged and, with the growth of the internet, most consumers know about food pathogens. What is missing is the story of food safety failures and outbreaks and how they impact us all.   These graphic novels are set to be the first of their kind in real information told through the format of a story written by professors who are experts in this field.

The "Bites of Truth" project involves a series of graphic novels that tell the stories of those impacted by a fictional outbreak of a foodborne pathogen and how individuals, families, and even entire communities are impacted.  Each title tackles a different perspective and stage of the outbreak. These stories and many details are based on real events and people that the authors have worked with over many years.
